 Ah, Easter is here. Finally feeling like spring is coming. Or something. There's more snow than in years, and two years ago I had already posted about seeing first spring flowers. But sun is shining today and some birds are singing and it feels like spring. 

I love the cooking and the challenge is good at making me break from my routine. But when I need to plan almost full year ahead of what to do, I feel too much pressure. And my plans have already gone wonky. LOL But I have tons of recipes today to post about. Hope you enjoy.

#16 Milk pudding
I think this is the most relevant translation for the recipe. It's been rather special dessert in my family, since I was kid. Every now and then I make it just to feel like kid again.


5 dl Milk
3 Tbsp Corn starch
2 Tbsp sugar
(3/4 tsp vanillasugar)

Pour all things to kettle. Heat while slowly whisking. Boil for 2 minutes whisking all the while. Lift from the stove and add vanilla. Pour into serving dish and let cool. Serve with raspberry jam.

#17 Japanese potatosalad
This recipe I took from the site for bento recipes. I might have twisted if a bit though. For my own tastes. But if you're interested on bento recipes go visit Maki's site here

3 medium size potatoes
1 carrot
cucumber
1 onion
1 egg
1 cup mayonaise

Boil potatoes and carrot until tender. Boil egg until hard. Let cool.
Slice cucumber and onion in thin slices. Sprinkle on salt and let stay for 10-15 minute. Press the extra moisture away.
Cut the cool vegetables and egg.
Mixture everything.



#18 Tuna Sandwich
And here we have my saving recipe for the days when I have nothing ready for the work.. that is if I happen to have can of tuna. 
1 subway sandwich
1 can of tuna (185g) 
2 Tbsp mustard-cucumber relish
2 Tbsp mayonaise
1 Tbsp creme fraise or sour cream

Cut the subway preferable way, mix all ingredients for the filling. Fill the sandwich, add lettuce, tomato and cucumber.


#19 Fast Chocolate cupcakes
This is regular recipe when my youngest wants to bake with me something. We're varying ingredients sometimes, adding mint chocolate crush or leaving the cocoa powder out. Using different frosting. Best thing is, you just pour and mix everything together and voila, it's done. This recipe makes about 24 small cupcakes.

2dl flour
1 dl sugar
1 tsp baking powder
3 tsp vanilla sugar
4 Tbsp cocoa powder
1,5 dl milk
1 dl shortening
1 egg

Heat the oven to 200 degrees Celcius. Mix dry ingredients. Add in wet stuff and mix until smooth. Pour into cupcake molds. Bake in the oven 12-15 minutes.

This time I have no pics. The goodies with mint crush and cream cheese frosting were gone before I could take pic. 

# 20 Granny's spooncakes
I have no idea what you call these cookies/short breads, but here they are known "spoon bread" LUSIKKALEIPÄ. I think spooncakes sounds nice. LOL. This recipe is from my former mother-in-law who I still get along splendidly. Also these are what couple generation back were made for every party and celebration. My family had these for the Easter. And so do I.

200g butter
1,5 dl sugar
vanilla sugar
1 tsp baking powder
4 dl cake flour

Melt the butter in the kettle. Let is boil until all the foam has disappeared. Take kettle of the stove and add in sugar. Mix and cool well. (rather it be very stiff)
Mix in flour and baking powder and vanilla sugar that you sifted together.

Heat oven to 175 degrees Celcius. Press tiny bit of dough into the tea spoon so you get cookies with round and smooth sides. Spread cookies to baking sheet and bake in the oven for until golden color. (about 12 minutes). Let cool and store for couple of days.

After couple of days, spread some jam (raspberry) to the smooth side and press another cookie onto it. Let dry. Serve with (powder)sugar sprinkled on.



#21 Mämmi
Now this one is a thing that divides people even here in Finland. I tried to translate the word but the dictionary gave me 1) "traditional Finnish Easter dessert made from rye flour" 2) malted rye 3) rye pudding. You figure it our yourself which you prefer to say. I call it Mämmi. And so does my Japanese friend who I gave some of this homemade variety. Mämmi is very popular Easter dessert around here, though some people hate it with passion. Some people use mämmi even further. I still haven't tried mämmi ice cream though. 
Since this is so popular, you can practically buy it from even the smallest kiosk at the Easter time, and thus the recipes are pretty "hard core house wife" stuff. I think. Well, if that makes me hard core house wife so be it. It was easy and kinda fun. 
I won't share recipe here, but have a few pics. 


#22 Chicken with olives and carrots
This recipe is from my American friend when I complained that I have nothing new to try for a dinner. I'm not fond of olives so I skipped that part. And made few shortcuts when my pantry looked rather empty. But it was tasty.
NO recipe for this either. 


#23 Okonomiyaki
My Japan crazed self was screaming of joy when after awhile I finally had stuff to do the okonomiyaki from. Recipe I found from the internet and since okonomiyaki is like "fry what ever you like with batter and cabbage" I'll just share the batter recipe I found for myself. This is the base I use everytime, the rest of the ingredients are usually what ever I happen to have. You go google them and find your own favourites. 

this makes 2
1 cup flour
2/3 cups dashi
2 eggs
+ cabbage thinly cut
+whatever you like

Mix together flour, dashi and eggs. Add in everything else. Pour half of the batter to frying pan. Fry 5-7 minutes on both sides. 
Serve with okonomiyaki sauce and mayonnaise.

#24 Waffles
I used to think that waffles are just bit thicker crepes. Well, that's how the waffle recipe mum used to have was. It wasn't until I got friends all over the world that I found what I would call "THE waffles". This basic recipe has been following me years, and every now and then I use the effort to dig the waffle pan from the storage. At least kiddos love me those time. LOL

2 cups flour
1 tsp salt
4 tsp baking powder
2 Tbsp sugar
2 eggs
1,5 cups warm milk
75g butter, melted
1 tsp vanilla

Mix dry ingredients. Heat iron while putting rest together. 
Beat eggs lightly, Add other liquids. Pour in flour mix and beat until blended.
Cook waffles until crispy and golden.

#25 Vanilla-Raspberry crumble

This is actually one of the recipes that I had collected but never tried. And usually I end up trying them once and throwing them away. this one though was a success, if you ask my kiddos. One of the easiest things as well. 
This time I even have pics from making it...


1 package (75g) vanilla sauce mix
2 dl flour
80 g butter
3/4dl brown sugar
1,5 dl oats
200g frozen raspberries

Heat oven to 200 degrees Celcius.
Make vanilla sauce according the introduction on the package. Set aside
Pour flour into the bowl, add butter and pick until grainy. Add in brown sugar and oats
Pour vanilla sauce into the oven bowl, (pan, what you call it) Pour frozen raspberries over the sauce. Spread the flour-sugar-oats mixture over the whole thing.
Bake in the oven for about 20 minutes. (If you prefer using fresh berries, shorten baking time for 5 minutes)

 And here we are again. Slowly but surely making recipe after recipe. Thankfully I have two kiddos with birthdays coming up so I can use that as an excuse to bake bake and bake. And I'm pretty sure there will be some edible Christmas presents this year.
