Hello there and greetings from the summery Finland. We've had three weeks of heatwave, sunshine and delicious warmth. Well, more than enough actually. It's been so dry that we've been worried about hedgehogs and other small animals. Today it rained. Finally. And while my two boys are bored and asking for things to do (thank kami for Pinterest) I find this time a perfect moment to update my challenge post. So, get ready for a massive update. I have like two months worth of stuff to tell you about.
#34 Teriyaki sauce
I borrowed a manga cookbook once from the local library and had to copy few recipes. One of them was teriyaki sauce. And while I just LOVE this, it never works as it should. I'm considering of looking other recipes to fill this one's place. And since the internet is filled with recipes like this, I let you search our own favorite. What you need is soy sauce, sake, mirin and sugar. MY recipe calls for equal parts of each, but somehow it never thickens enough. Go figure.
#35 Potato chips
I tried to be frugal this year's Eve of May 1st celebration and make my own potato chips. Mistake. First, the preparations take ages. then at least my chips failed. It tasted good the working for the amount I know my boys would eat would take ages and ages. They refused to taste too. Suspicious brats. No recipe. Took it away from my notebook too. Go find your own and let's hope it works better for you.

#36 Munkkipossut aka filled donuts
We Finns celebrate the Eve of Vappu (30th of April) loudly and with lots of food. If you're booze lover, you'll love the party in here. This year me and boys celebrated little bit early, due boys staying at their father's on the actual date. But we had sima (non alcoholic mead) and donuts. Which is the essential for it to be Vappu. This year I tried the filled variation.
5dl milk
50g fresh yeast
100g butter melted
100g sugar
10g salt
12-14 dl flour
(2 eggs) [I don't use eggs EVER in my donut /sweet roll recipe. It's softer that way]
apple jam that can be baked
oil for frying (0,5-1 liter)
Warm up the milk until as warm as your hand. Melt the yeast into milk. Add salt, sugar (and eggs). Gradually add in flour while kneading. Pour in melted butter and continue kneading until the dough is spongy. Cover the bowl and let raise about 30 min
Knead all the air out of dough. Roll dough a bit and take 8-10 cm thins. Roll rectangles and put small heap of apple jam in the middle. Fold in two and tweak the edges together. Place the ready donuts onto the baking paper that you have spread some oil onto. Let raise 25 minutes.
Heat oil and fry donuts 2-3 minutes per side. Lift on to paper towel to rest. Roll donuts on sugar and let cool.




Damn they were delicious. If you're not friend of filled ones, but make donuts out of the dough and fry similar manner.
#37 Lemon lover's pound cake
Now, THIS recipe is something I kinda wrote myself. You know.. one part from one recipe and other from the another and third part is thinking how it would taste if.... If you love lemony goods (be it cupcakes or cake or perhaps a steamy fanfiction) you'll love this one. I know I do. And apparently so do my workmates.
250g butter
4 dl sugar
4 eggs
5 Tbsp lemon juice
1 Tbsp grated lemon peel
4 dl flour
1 tsp baking soda
1/4 tsp salt
1 cup sour cream
Cream sugar and butter until fluffy. Add eggs one by one.
Stir in lemon juice and grated peel
Combine flour, soda and salt. Add gradually to mixture alternating with sour cream
Pour into greased pan. Bake in 175 Celcius for 50-60 minute or until toothpick comes out clean
Let cool for 10 minutes before removing from pan.
Alternatively you can make cupcakes from this too.



#38 Pikapiirakka aka fast pie
The name of this pie comes from the fact it's fast and easy to make. Usable for pretty much anything. Just make sure you bake it enough time in the oven. Mine usually is bit too raw from the middle.
2 eggs
1 dl sugar
1 dl cream
0,5 dl butter, melted
2 dl flour
1,5 tsp baking powder
berries (or what you want into it)
0,5 dl melted butter
0,5 dl sugar
1,5 dl rolled oats
Beat eggs and sugar until light. Add in cream and melted butter. MIx flour and baking powder and gradually add into mixture. Pour into pie form.
Add berries. Fresh or frozen ones.
Mix together melted butter, sugar and oats and sprinkle over the berries.
Bake in the oven 200 Celcius for 30-40 minutes. [if you use frozen berries, use more time. check the center with toothpick.]

#39 Korokke
I love Japanese food and often make some for my lunch at work. Korokke is fabulous to eat right when done, and so far it has worked as part of my bento as well. This recipe is from another cook book I borrowed from the library few years ago.
5 potatoes (600g)
250g ground meat
1 small onion
1,5 Tbsp cream
1 tsp salt
ground white pepper
1 egg
flour
bread crumps/panko
0,5 liter oil for frying
Boil potatoes until soft. pour away the water and let steam a bit. Peel and smash while still hot.
Peel and mince onion. Fry half of it to use as garnish. (optional)
Fry meat on a frying pan.
Add in meat and half of onion into potato smash. Stir light and add cream, salt, sugar and pepper. Stir but not too much. Just enough everything to blend nicely.
Form 8 round "steaks" out of cooled micture. Dip each steak into flour, then lightly beated egg and finally on bread crumps.
Fry in heated oil until both sides are nicely brown.
Usually served with Worcestershire sauce and ketchup.... I use tonkatsu sauce, because I like it.
Sorry no pics. Nearly ate all before I managed to pack away my bento.
#40 Chocolate porridge
Used this to surprise my boys yesterday morning. We are on summer holiday starting from this week, so I though why not make something nice.
5dl milk
3/4 dl semolina
1,5 Tbsp cocoa powder
1-2 Tbsp sugar
pinch of seasalt
(1/2 tsp vanilla sugar)
Heat the milk in a kettle until boiling
Add in cocoa and semolina while whisking all the time. Let simmer on medium-low heat for 10 minutes.
Add in sugar, salt and vanilla.
Serve with cold milk.
Sorry, no pic. Also this amount barely was enough for us three. I'd say this is perfect for two.
#41 Cake in a mug
I'm pretty sure you all know at least couple recipes for these. If not go look. I got this one from the women's magazine couple years back.



#42 Tortillas
Had to check my list twice until I realized I forgot this, even though we made these already at Vappu. Boys just loved them and we had nice picnic at the living room floor.
(makes 12)
3 cups flour
2 tsp baking powder
1 tsp salt
4-6 Tbsp shortening
1 1/4 cups warm water
mix dry ingredients. Add shortening
Add water little by little until dough is soft but not sticky.
Knead few minutes
Form 12 balls, let rest 10 minutes or longer
Roll to round tortillas,
Fry on a dry pan for few seconds.

And there you go. I think I'm up to date now with the challenge. Wanted to make more during the month of May, but there's been financial and timetable problems for that. Too many meetings and other hobbies to have time to cook. But hey! it's summer holiday and long light evenings to do what I want while kiddos are at their dad. (Granted I will be working on those weeks, but who counts)
