How time flies. Just couple weeks ago it was start of the summer and now it's ending already. Not that one would notice in this heat. It's been unlikely hot and dry all summer. Somehow though I have managed to work with this challenge, though truthfully, sometimes I really did not want to cook or bake anything. It was just that hot in my kitchen.
I have like two months worth of posting... sorry that I forgot pics at time
#43 Gyunyukan
I found this recipe from the Finnish book for Japanese cooking. This recipe was moderated to fit what you can find in stores here, so I decided to forgo posting a recipe. Plus after trying this one, I really didn't like it much. Actually I had such a dislike for it that I just ripped the recipe from my notebook to never try again. But I'm not going to just leave you helplessly search recipe. I found another from here.

A friendly reminder here as well. Just because the recipe I had is not working for me or I just don't like the results I got doesn't mean it is not worth of trying.
#44 Menchikatsu
I have learned to like deep fried food lately. Even though it's best eaten right after, I usually make these for my bento.
200gr ground beef
2 leaves of cabbage
1 small onion
1,5 dl panko
3 Tbsp milk
2/3 tsp salt
1 tsp mustard
1 egg
flour
oil for frying
Cut cabbage to small bits, mince onion
Mix beef, cabbage, onion, panko, salt and mustard. Form 8 stakes.
Roll steaks in flour, then in lightly beaten egg and finally in panko.
Fry in oil.


#45 Kakiage
This is one of the recipes I just had to find after watching a dorama. There are few like that in my book. This one I had to try after watching Omotesando High School Choir. I love the dorama, and I really liked kakiage, though I rarely make it since I am only one in my family that likes them. The recipe is easy and very adaptable. From what I read, just put in what you want. Mine used these
Base:
1 cup flour
1 cup water
1 egg
Onion
Carrots
Zuccini
Cabbage
Julienne and/mince vegetable make sure they are about same size. Try to use ingredients that take about same time to cook. Mix everything together and fry in oil. Pour in couple spoonfuls at time.
You can and Japanese recipes more often than not do add in fish. Go rummage the wonderful world of web and find what you like the best.

#46 Red velvet cake
This recipe I got from my friend who's username just happened to be red velvet cake. (I miss you terribly, though I can and often do speak with you in the FB.) No recipe this time. I'm sure internet is already filled with different variations and mine doesn't add to them anyhow.

#47 Pork in pesto
This one I got from my soul sister. Her family made this for us when we visited them and I just had to have the recipe. It's easy enough too. Just have pork, bacon and pesto. Bake in oven low heat for few hours. This year I made this as our Midsummer dinner and it was delicious. Even my boys ate everything on their plate and asked for more.

#48 Cognac cake
This recipe was a life savior when we needed to serve something for those who can't have gluten or milk in their diet. The name says cognac but I actually very rarely add cognac into the cake. Fluffy cake might be more accurate name for it. LOL This is very soft and good and you can adapt it even more with pouring chocolate ganache or something over it.
3 eggs
2 dl sugar
1 tsp baking powder
2 tsp vanilla sugar
3 dl potato starch
200 g (lactose free) butter or margarine
3 Tbsp cognac
grease and flour cake pan. (if gluten free, make sure to use gluten free breadcrumps)
beat eggs and sugar until light and fluffy
mix dry ingredients and sift into the mix carefully. Fold gently until smooth
melt butter and add it when cooled into the mixture, beat strongly.
Add in cognac for the taste
Pour batter into the mold and bake in 180 deg Celcius for 50 minutes. Let cake cool before removing the mold.

#49 Frosting for the cake
This is my favorite cake frosting for the "coffee cakes" as we call those tubepan cakes.
200g dark chocolate
1 tsp butter
1/4 dl cream
1/4 dl coffee
melt chocolate and butter. Add in cream and coffee, pour over the cake

#50 Black bread from Åland
If there's one bread I could eat all day it's this. Sweet and tangy and oh so delicious.And takes forever to make, but it's so worth it.
Again I won't write down recipe, but poke me if you would want it. I have pics though


#51 Dream torte
This is chocolate roll cake with vanilla butter cream filling. No pics and no recipe this time.
#52 Cupcakes for the masters
Name might be misleading but I got this from the cooking book meant for the children. Actually this time the one doing the cooking is my son.
100 g butter
1,5 dl sugar
1 egg
200g quark or sour cream
3 dl flour
2 tsp baking powder
Cream butter and sugar until light. Add in the egg and quark/sour cream. MIx well.
Sift together flour and baking powder and add gradually into the batter.
Pour into the cupcake molds and bake in the oven at 200 deg Celcius for 15-17 minutes

I still have few to post, but I will leave that for another time.
