And I start this with updating few recipes for my challenge. I don't think I will write up every recipe from my notebook, but I try to post pics when I make some.
SUGAR COOKIES
One of my loved and well used recipes is for sugar cookies. I think I found that one from the internet, and since there's like gazillion varieties of them, I let you do the searching for the one recipe that fits you best. We make these quite often, because my youngest son just LOVES to bake cookies. If I ask what we shall bake, it's cookies. preferably the one he can do with cutter.
GINGERBREAD COOKIES
Staying with beloved recipes, this one for the Christmas time.
This one is from my childhood and I accidentally modified it at the age of 10 or so.
1,5 dl syrup
1 dl sugar
1 tsp cloves
1tsp ginger
2 tsp cinnamon
2 tsp baking soda
125 gr butter
1 egg
5-6 dl flour
in a pot mix together sugar, syrup and spices and heat to boil. (I add soda into it too, but that's rather my own quirk. You can put it in with flour if you like. if you do add soda into pot, keep close eye to mixture, soda makes it foam)
take pot of stove and add butter. let it melt.
Cool the mixture
add in egg and flour (I use electronic mixer for this part)
Then store in the fridge at least overnight.
Roll the dough and take cookies with cutters. Bake in 200 deg Celcius for about 5-8 minutes



I make all my christmas cookies with this one. And I let kiddos go wild when decorating. (building the house and fence is pure me though)
SKILLET CAKE the cupcake version
I LOVE this recipe. While it says skillet cake, I haven't actually ever done it in skillet (don't have one) but in cupcake forms.

CHRISTMAS CASSEROLES
Now, this is traditional Finnish Christmas food. Made with potatoes, carrots or turnip. Lately it's been rather big trend to use sweet potatoes, but I won't go there. Dunno how things are there were you. my reader, are, but here people are buying this stuff more and more ready made from the stores. So making them from scratch is something to be proud of. At least if you ask me.
Won't translate the recipes for these either, but if you google with "Finnish Christmas Casseroles" you should find recipes. In case you are interested. I always make enough to give relatives.

And then the last one that I did this autumn, but forgot to take pic
OVEN BAKED SALMON IN CREAM
One fillet of salmon
cream
dill
salt
"lemon pepper"
(or just use your preferable spices)
rub spices and salt over the salmon
grease oven pan and put in the salmon (skin side up) and pour in enough cream to cover the fish
(little less is okay too, just make sure to pour some cream over the fish while it's baking)
bake in 175 deg Celcius for until the skin is easily removed
