When I stop to think about it...

...my life right now is good. Amazing. Freaking impossibly wonderful. *knock on wood here*
But truly, life from the start of the year has been very good to me. Certainly, we've only had like a month of this year and 11 ahead, but if the rest of the eleven months will be even partly this good, I will love the year 2018.
well, there's been bizarre things as well. Like today, when I dropped my sons to have their week with their father, and his 1,5 yrs old daughter saw me hugging boys and demanded that I hug her as well... twice. Well, I can't say no to cuddling small children, no matter how I feel about their parents.
But onwards!!! I have new posts for the challenge. It's going slowly but surely. And I even have few plans for the coming week.
So, I had guests staying over the weekend and needed to make food. Next item on my challenge list is difficult if you have guests or children who are picky eaters, like mine are. But this has also been a recipe that I have carried with me for the last 20 years.
Summer's Curry-Chicken-Stew (dunno it that name is even correct but that's how I have called it)
350 gr chicken bits
rice for 4 person, boiled
frozen peas
corn
curry sauce
Fry chicken on a pan. Add everything into boiled, dried rice and mix well. Lastly add in curry sauce and mix. Serve hot
Goes freakingly well with herbalsalt sprinkled on top
of course, like I have had to do lately, you can serve all stuff separately,(cause there's always the one who doesn't like corn or peas or both) but I guess then it's not stew anymore, ne?
Second recipe is for the curry sause used in the stew. I used to use the store bought variety where you just add milk and boil, but this is so much more fun. And spicier.
Curry Sauce

1,5 Tbsp butter
3 tsp curry
2-3 Tbsp flour
4-5 dl broth
1 dl cream
Melt the butter in a small kettle. Add in curry
Add in flour little by little
Pour in the broth and let stew until thick
Last add in the cream and serve
(I just love the simpleness of recipes I've written down after using them for ages. Sorry if there's too many short cuts.)
Next item on my done list, is something I actually failed with. My experimental kitchen failed to consider that caramel FILLED candy is not the same as caramel candy. Ah, well...
Anyway then name of these comes from a well known sweets, TWIX
TWIX Cookies
100 gr butter
1,5 dl sugar
1 egg
3 dl cake flour
1 tsp vanilla
0,5 tsp baking soda
0,5 tsp baking powder
Cream butter and sugar until fluffy, Add in egg and mix well. Mix dry ingredients together and mix into butter well. Don't overmix.
Roll dough thinly and take cookies with cutter. Bake in the oven at 175 Celcius for 8-12 minutes. Make sure they don't get too brown. Let cool
170 gr caramel candy
2 Tbsp milk
Melt candies and milk in a small kettle at low temp. Spread the mixture over the cookies and let harden
100 gr milk chocolate
Melt the chocolate and spread over caramel covered cookies. Let cool.

my failed cookies had caramel filled chocolates, so result was not what I hoped for. But they taste good anyway and at least my boys love them.
And my last update for the day, recipe #13 is today's evening snack.
Rye-snack in the microwave oven
2 slices rye bread
butter
few slices of ham
bell pepper or tomato
cheese
(paprika or chili)
Spread butter over slices of bread,
Put ham, tomato or bell pepper and cheese over the bread. If you want, sprinkle on spices
Heat in the micro at half-power for about 1,5 minutes.


I hope you enjoyed my rambling recipes again. I counted and without taking into consideration of different cookie variations and drinks I still have 130 recipes to make this year... busy.Well, that's 11 or so recipes per month and since most of them seem to be sweets... good bye loosing weight this year. Ah, well...
